Here are some photos from construction of our bread oven. It happened over the span of two years. The hearth is 5'x7' and can bake over 40 loaves at one time!
In this style of oven (called a black oven) the fire is made in the baking chamber itself. The fire burns for several hours and is reduced to ash, having heated the bricks to over 600°F.
The ashes are then swept out, the hearth is cleaned, and the oven closed up to let the temperature equalize.
One feature of our oven is that the back wall is actually a door into the bakery. This allows us to keep the ashes outside and load bread quickly and easily.
